I met different TJQ teachers (also in YMT) who uses differt breathing system:
some inhale by nose and exhale by mouth others inhale and exhale by nose,
in some cases the tounge is under the palate during the entire breathing in others only while inhaling.
I confess to be a bit confused, which is the correct YMT traditional breathing system?

These are all correct methods.
Choosing whether to breath in & out the nose, or in nose out the mouth depends on the season & weather. Breathing out the mouth is more forceful & heats the body up. So in a place like Washington, DC, where it is easily 90 degrees (F) with 70 to 80% humidity in the summer, one breaths thru the nose only during the hot seasons. In cooler places, like Estonia & Russia, you exhale thru the mouth most of the year.
When using/transporting qi as part of one's fajing, one uses the mouth to exhale to add more force.
The tongue touches the palate in order to connect the ren & du mai. In respect to the circulation of qi, it is only necessary to have the tongue touching during inhale, but from a martial point of view (& after all we are practicing a quan), it makes sense to keep the touch touching the roof of the mouth all the time so as not to bite it if struck.
